Carrot Curry Soup

Prep Time : 30 minutes

Servings: 4

Ingredients:

  • 6 wedges of The Laughing Cow® cheese (light or original)
  • 500g carrots
  • 2 onions
  • 1 tbsp curry
  • 2 chicken stock cubes
  • 2 tbsp olive oil

Instructions:

  1. Peel the carrots and cut them into pieces. Chop the onions and cook in a pot with olive oil. When onions are softened, add carrots and curry powder. Stir occasionally for 5 minutes.
  2. Add one liter of water and chicken stock cubes and let simmer until carrots are fully cooked (about 30-35 minutes on low heat).
  3. Puree the soup. Add The Laughing Cow cheese triangles and puree again until creamy.

Spiced Pear Muffins

Prep Time: 15 minutes

Cook Time: 20 minutes

Ingredients:

Pear Muffins

  • 1/3 cup (70 gr) brown sugar
  • 2 eggs
  • 1/2 cup (120 ml) canola oil – or melted butter
  • 1/2 cup (120 g) plain Greek yogurt (can be substituted with any natural yogurt (including dairy-free yogurt if needed) or sour cream)
  • 1 1/3 cup (200 g) all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp allspice
  • 1 California Bartlett pear (choose a pear that is slightly firm but not too ripe)

Cinnamon Sugar Topping (optional)

  • 1 1/2 tbsp turbinado sugar (raw sugar) or coarse sugar
  • 1/4 tsp ground cinnamon

Instructions:

Pear Muffins

  1. Preheat your oven on 180°C/350°F. Line your muffin pan with paper liners or grease the pan well with oil.
  2. Peel, core and slice the pear into very small cubes. Set aside.
  3. In a large mixing bowl, whisk together the eggs and brown sugar until frothy.
  4. Add the canola oil and Greek yogurt and whisk until smooth.
  5. In a separate bowl, mix together the flour, baking powder, baking soda and spices. Add it to the wet ingredients and whisk until smooth and no lumps remain. Do not over-mix.
  6. Add the pear chunks and carefully mix them into the batter using a spatula. Optional: keep about 1/4 of the pear chunks to use over the muffins.
  7. Scoop out some batter into each muffin case in the muffin pan. Optional: place the rest of the pear chunks over each muffin.

Cinnamon Sugar Topping (optional)

  1. Mix together the sugar and ground cinnamon in a small bowl. Sprinkle some of it over each muffin.
  2. Bake for about 20 minutes, or until puffed and golden (and a toothpick inserted in the center of each muffin comes out clean). Allow to cool slightly. Unmould and cool on rack.

 

California Pear Crumble

This easy pear crumble comes together in just minutes and makes a delicious dessert!

Prep Time: 15 minutes

Cook Time: 25 minutes

Servings : 8

Ingredients:

Filling

  • 5 cups sliced fresh California Bartlett pears (3 to 4 pears depending on size)
  • 2 teaspoons fresh lemon juice

Topping

  • 1 cup all-purpose flour
  • 1/2 cup packed light or dark brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger*
  • 1/2 cup unsalted butter at room temperature

Instructions:

Filling

  1. Preheat the oven to 375 degrees. Spray an 8-inch square (or 11- by 7-inch) baking dish with cooking spray and set aside.
  2. Arrange the pears into an even layer in the prepared baking dish and sprinkle with lemon juice, then make the crumble topping.

Topping

  1. Stir the flour, brown sugar, baking powder, cinnamon, ginger*, and salt together in a medium bowl.
  2. Add the butter and use your fingers to cut it into the mixture until it comes together and forms large crumbles.
  3. Sprinkle the topping evenly over the pears.
  4. Set the baking dish on a large rimmed baking sheet to catch any juices that might spill over and bake 25 to 35 minutes, until the pear juices are bubbling around the edges and the topping is light golden.
  5. Cool for 20 to 30 minutes to let the juices set up a little bit, then serve with Natrel Lactose Free vanilla ice cream.

Notes: Best to serve the day it’s made.

*If you don’t like ginger, you can substitute nutmeg, allspice, cloves, or additional cinnamon in the topping

 

Pear, Cheese and Nuts

Servings: 1

Ingredients:

  • 1 California Bartlett pear cut in half
  • 2 wedges of The Laughing Cow® cheese
  • Walnuts in pieces

Instructions:

  1. With a spoon, remove the center of the pear.
  2. Fill it with The Laughing Cow® cheese.
  3. Sprinkle with nuts.
